Here’s a recipe from the book!

Chocolate Chex Trees

These yummy and adorable trees are so simple to make and a great project if you have kids at home who need something to do. Set them on a disposable plate, foil-wrapped piece of cardboard, or a large sugar cookie wrapped in cellophane for gift-giving!

Ingredients:
3 cups Chex Chocolate cereal
6 pretzel sticks (the thick kind, made for dipping)
½ cup peanut butter
¼ cup Nutella
3 tablespoons butter, softened
1 cup powdered sugar

Directions:
Mix the peanut butter, Nutella, butter, and powdered sugar in a bowl.
On whatever you plan to use for a base, mold the peanut butter mixture around the pretzel stick until it stands upright and forms a slight cone shape.
Hold it steady by using the tip of the pretzel as a handle and begin inserting pieces of cereal into the peanut butter mixture in a symmetrical pattern around the stick. You can tip the cereal pieces up or down, depending on your personal preference. Add more cereal pieces, staggering them as you move upward, until you get near the top.
For the top of the tree, use broken pieces or cut them in half to get the smaller scale of branches near the top.
Use two pieces of cereal back to back to form the top.
Dust with powdered sugar.
Makes 6 trees

Q&A

Can you tell us about a real-life hero you’ve met?
I haven’t met them in person although I have spoken with them on the phone, but I can tell you there are some amazing heroes featured in A Cowboy Christmas. The rodeo athletes who compete and are injured, heal and go back to compete some more are just incredible and I love hearing their stories of triumph.

Tea or Coffee? And how do you take it?
Although I like the smell of coffee, I have never enjoyed the taste of it, so I am definitely a tea fan. Mint is my overall favorite, but I also enjoy a cup of seasonal time. This time of year, I can’t get enough of the Christmas flavored teas. In fact, I have a tasty tea recipe in A Cowboy Christmas.

What will always make you smile, even on a bad day?
My husband, Captain Cavedweller. He makes me laugh all the time, even when I’m having a horrible day.

What do you do to unwind and relax?
I love to read, but then, don’t all of us who enjoy getting lost in a story? I also enjoy photography, crafts, and trying out new recipes. I had such fun with A Cowboy Christmas because it incorporates so many things that I love. I took all the food and craft photos in the book and it was awesome to learn new photography skills to do that. We also tried so many delicious recipes for this book. Each recipe included was made right in my kitchen and taste-tested by my husband.

If you couldn’t be a writer anymore, what profession would you take up?
If I could no longer be a writer (which would be completely devastating), I would probably focus on party planning or maybe open a bed and breakfast. I get such a kick out of planning events and I love to bake, so I’d most likely gravitate to one of those careers.

What’s something you’d like to tell your fans?
I have the best fans and they bring me so much joy and happiness. From the bottom of my heart, thank you for being so awesome!

What inspires you daily?
Life and the world around me. There is so much  beauty, and goodness, and hope in the world if we just take a moment to see it, appreciate I, and enjoy it.
